Earlier, this week I baked Jolie Tucker’s Cast Iron Creation Valentine’s Day Berry Cake. The recipe was given to me by Jodi Rath the author of The Cast Iron Skillet Mystery Series. In this post, I will give you the recipe and what I thought about it.

I went over the recipe to make sure that we had everything. I realized that we were out of Whole Wheat Flour so we had to pick some up. The recipe calls for frozen berries since we had blueberries and blackberries in the freezer I was like ok it’s good. Oh, ya we didn’t have a cast iron skillet so my step-dad pick up one for us. It’s a 10 inch so I had to modify the amounts. This recipe is easy to follow, even with my modifications.

The Cast Iron Creation Valentine’s Day Berry Cake is really nice. I loved the texture. However, I kinda wished I had used raspberries or strawberries as the blueberries and blackberries made it a little tart for me, but everyone else adored it, especially topped with whipped cream.
